Raisins Butter Cake Recipe

Ingredients :
250g butter, finely chopped
250g self-raising flour, sifted
5 tablespoons caster sugar
5 tablespoons condensed milk
5 eggs
40g raisins, stained with some flour

Steps :
1. Preheat oven to 180°C. Grease and lightly flour a 20cm round baking tin.
2. In a large bowl, beat the butter, sugar and condensed milk with an electric mixer until light and fluffy.
3. Add in eggs, one at a time and beat well after each addition at a low speed.
4. Blend in sifted flour gradually to mix.
5. Add in raisins and beat for another 1 minute. Use a spatula to scrap down the side and base of the bowl.
Note : Over-beating the mixture may cause the cake to be tough! Rub raisins with flour to avoid them sinking to the bottom.
6. Spoon batter into the prepared baking tin and smooth the surface with a spatula.
7. Bake for 50 to 60 minutes or until a skewer pulls out clean from the middle of the cake.
8. Cool cake in tin for 5 minutes before removing from tin. The cake itself should be golden brown and spring back when lightly pressed in the centre.
9. It is now ready to serve!
