Ingredients :
250g flour,
30g sugar
1 tablespoon salt
100g butter
1 beaten egg
For egg filling,
Ingredients:
100 ml water
100 ml milk
80g sugar
3 eggs
Methods:
1. In a medium bowl, mix together the salt, sugar and flour.
2. Mix in butter until it is in the form of fine crumbs.
3. Stir in the egg until the mixture forms a dough.
4. Shape dough into 13 balls and press into tart moulds. Use 2 fingers to shape the edge into A shape and avoid a thick pastry bottom.
5. Preheat the oven to 200 degrees. Combine sugar and water in a saucepan and bring to boil. Cook until the sugar is dissolved.
6. Removed from heat and cool to room temperature. Strain the eggs through a sieve and whisk into the sugar mixture.
7. Stir in the milk and strain the filling through a sieve. Fill the tart shells.
8. Bake for 20-25 minutes in the preheated oven until golden brown and the filling is puffed up a little bit.
